Invitation to apply for a 2-year Post-Doc position in the field of Food Science and Nutrition at the laboratory for Science and Technology of Milk and Egg in Rennes (France) within the French National Institute for Agricultural Research (INRA) and Agrocampus Ouest.

This Post-Doc project aims at understanding the mechanisms of dairy gels disintegration in the stomach and determining how the structure of the gels impacts the kinetics of nutrient bioavailability. It will consist in the:

  • design of dairy gels with varied structures
  • multi-scale characterization of the structure of digested and undigested food with the use of equipment such as synchrotron facilities, confocal and electronic microscopy, particle tracking analysis...
  • in vitro digestion using relevant dynamic digestion models. We will particularly focus on the proteolysis kinetics by pepsine.
  • in vivo experiments on multi-canulated and catheterized pigs to assess the bioaccessibility and bioavailability of nutriments.

The project will include a strong cooperation with several labs in France, UK and USA.

Encouraged are candidates with a PhD in Food Science and/or Nutrition, if possible with an experience in food digestion. Applicants should be fluent in speaking and writing English. Basic knowledge of French would be appreciated.

Duration: 24 months, starting from March or April 2015
Net salary: ~ 1900 €/month

The city is classified as a city of art and history. Rennes is connected to the high speed TGV rail network from both Paris (two-hour travel) and Lille.
