Brief description
Established in 1919, the American Institute of Baking is a non-profit organization providing education and research in the science ofbaking, nutrition, bakery management, and allied sciences. AIB addresses the wide-ranging needs for the grain-based industry created by the FDA, OSHA, and EPA. AIB operates one of the largest food safety, sanitation inspection, and worker safety audit programs in the food industry. AIB's stated mission is to work with the cereal industry to identify modern cereal food production methods and technologies, meet consumer demands for healthy and safe food products, and ensure a safe, hygienic work place for food industry employees. AIB works to achieve this mission through different departments: Research; Food Safety and Worker Safety; School of Baking and The Ruth Emerson Library.
